I most often read chapter by chapter, but I often pick up my Bible and start reading where I hadn't planned to read that day. Yes, I think it's easier to stay committed when I make prearranged time in my schedule - an appointment, or 'date' with my Bible. I also find that personally, it's easier for me to enjoy reading the Word - and allowing myself to 'get lost' (actually the route to being found) in the Word - when I position myself to have the least opportunity for interruption.
